We can’t have dairy so I used fake butter (country crock sticks with olive oil) and almond milk as one for one replacements for the butter and milk. (I “soured” it with a touch of lemon juice for the buttermilk). It was delicious but a bit flatter / more dense than pictured. It also took closer to an hour to bake – not sure if that part is related to the substitutions.

I didn’t expect it to be identical, since real butter makes everything better. I’m sure it would be amazing as written, but regardless, I definitely recommend this cake with standard dairy-free substitutions, if that’s an allergen in your group.

Hi Courtney! I was trying to find the original recipe for the layered cake and I can’t find it anymore! I made it two years ago for my birthday party and it turned out so perfect that my friend still raves about it! Her birthday is coming up and I would love to recreate it – is there any way for me to access the original recipe? I agree, making two batter is a bit more work, but I found it sooo worth it, the original was perfect!
