That seems crazy. Mine was billowing smoke out of my oven after 10 minutes. Thankfully I had extra coconut and stirred it after only 5 minutes and the took it out after another 2 minutes. I can’t imagine anyone baking it for 20 minutes at 425… Most other online recipes that I found for toasting coconut was 350* for 8-10 minutes.

My 18 year old daughter made this for my 9 year olds birthday and it was amazing! We shared some of the leftovers with the missionaries and they were in awe of how good it was. They said it was in their top 3 favorite desserts they’ve eaten on their mission.

If I made the coconut filling ahead of time, like a day early, what would be the best way to store it? on the counter? in the fridge ? I’m worried it will be rock hard if I store it in the fridge overnight.

I liked it overall. Next time I will cut the salt content in the coconut layer for me it was a bit too much. I would start with 1 tsp and add salt to you taste. I likevyo taste the contrast of the salt with the other flavors but 2 tsp was too much for me

Two things:
1. It took me about three hours to make;
2. My coconut burnt in 5.5 minutes at 425 – totally black- billows of black smoke (maybe not billows, but it was visible);
3. I went without coconut because I didn’t have any more on hand. Cake was still amazing!
4. I might make 1.5 recipe for frosting- I ran a little short at the end.

Thank you for a great cake recipe!

PS – I don’t bake much, so maybe others could have made the cake faster, but it’s pretty labor it’s pretty labor intensive. I clean as I go, so that may take longer, too.

You want to get strips of acetate paper that are 3-4″ tall. You’ll cut the length to fit the 6-inch cake round. And I don’t have a preference on cake ring brand.
