I’ve made this butter cream and whipped cream many times now for cakes I make for my kids and nieces and nephews (we use a doggerenr cake batter depending on their request). It is a great recipe and really makes such delicious frosting!! Thank you 🙂 really lovely recipe.

So happy you loved it! You could totally use GF flour. I like Cup4Cup brand the best. When replacing it for cake flour, I use 1/4 cup less GF flour overall.

I wouldn’t use fresh, unless you create a reduction with them – to do that, add the strawberries to a saucepan and cook over medium-low heat. As they soften, smash them to help release juices. You’ll want to puree the mixture and then continue to cook it on low heat until it thickens and reduces to about 1/4 cup. Let it cool and chill and then you can add that to the buttercream.

Courtney! I just wanted to say thank you SO MUCH for this recipe! I made it for my sons first birthday party and it was such a hit! It was gobbled up and I got so many compliments!
